Ingredients for Lemon Herb Butter Glaze

If preparing for more than One per person, just scale and multiply ingredients as needed 

Glaze:

  • 38g unsalted butter
  • 1 Tspn of Fresh Herb de Provence (Marjoram, Basil, Oregano, and Thyme)
  • 4-5g fine sea salt
  • Fresh lemon juice (Quarter/Half a Lemon) 

For the Salmon:

  • 1 salmon fillet per person (skin-on)

Step-by-Step Instructions

Preparing the Lemon Herb Butter Glaze

Step 1: Melt the Butter Gently
Add 380g butter to a small saucepan and place over low heat. Allow it to melt slowly, patience here prevents the butter from browning or separating.

Step 2: Bloom the Herbs
Once the butter is fully melted, stir in the fresh herbs. Cook gently for 1 minute, stirring occasionally. This step “blooms” the herbs, releasing their essential oils and infusing the butter with deep, aromatic flavour.

Step 3: Remove from Heat
Take the pan off the heat immediately after the minute is up. We want fragrant butter, not browned butter.

Step 4: Season with Salt
Stir in fine sea salt until completely dissolved. The salt not only seasons but also helps emulsify the glaze.

Step 5: Add the Lemon Juice Last
Add fresh lemon juice off the heat and stir thoroughly. Adding the lemon juice last preserves its bright, zesty flavour and prevents the acid from breaking down during cooking.

Step 6: Chill and Thicken
Keep the glaze chilled until service. As it cools, the butter will thicken to a spreadable consistency, making it perfect for spooning over hot fish.

Heat your grill or grill pan to medium-high. Grill salmon fillet plain until the skin is crispy and golden, then flip and cook until just done in the center, the fish should be opaque but still moist.
